Vegan Chocolate Orange Cake

Chocolate orange cake, garnished with orange slices and chocolates of your choice..Not just a visual delight, but also a delicious one!

Craving a super soft and moist cake but have no time to go out and grab one? In a hurry to host your guests and need a quick dessert fix? Try out this super quick recipe that yields fresh soft chocolate cake out in just 40 minutes!

Below portion will bake a 6 inch diameter, 4 inch height cake.

Ingredients:

  • 1 cup coconut milk (if vegan) or buttermilk (non-vegan)
  • 3/4 cup vegetable oil (use sunflower if possible)
  • 2 cup all-purpose flour
  • 1.75-2 cup sugar (increase/decrease as per taste level)
  • 1.75 cup cocoa powder
  • 2 tsp baking powder
  • 1.5 tsp baking soda
  • A pinch of salt
  • 1.5 tbsp orange zest
  • 1 tbsp vanilla extract
  • 1 cup boiling water
  • Hershey’s choco chips (unsweetened)

Procedure:

  1. Mix all the dry ingredients in a bowl
  2. Add milk, oil and vanilla extract and mix it well. Then, add water to it and beat it well
  3. Add orange zest to the mixture and give it a whisk (P.S. the batter will be too liquid, but don’t worry this will lead to a very soft cake)
  4. Preheat the oven at 180-degree fahrenheit for 15 minutes
  5. Grease the container well and pour the batter into it. Tap the container to evenly spread the batter and bake it
  6. After 15 minutes, to ensure that the cake is baked properly, insert a tooth pick into the centre of the cake. If it comes out clean, the cake is ready to serve otherwise bake it more

Garnishing:

  1. Melt Hershey’s choco chips using the double boil method and spread evenly on the cake once it cools down
  2. Dip some orange slices in the melted chocolate and freeze it

Double layer cake:

  1. Slice the cake from middle
  2. Put ganache on both the slices, place chopped oranges on one layer and then put the top cake layer on the bottom one
  3. Finally, coat the top layer with ganache and let it cool for some time
  4. Decorate it by sprinkling orange zest, rainbow cake decor or frozen chocolate dipped oranges

Note for a non-vegan recipe:

  • Coconut milk can be replaced by buttermilk for extra softness
  • Half an egg can be used for the above mixture for making it more fluffy
  • While making ganache, add boiling cream or full fat milk in choco chips to make ganache more liquid
