
Craving a super soft and moist cake but have no time to go out and grab one? In a hurry to host your guests and need a quick dessert fix? Try out this super quick recipe that yields fresh soft chocolate cake out in just 40 minutes!
Below portion will bake a 6 inch diameter, 4 inch height cake.
Ingredients:

- 1 cup coconut milk (if vegan) or buttermilk (non-vegan)
- 3/4 cup vegetable oil (use sunflower if possible)
- 2 cup all-purpose flour
- 1.75-2 cup sugar (increase/decrease as per taste level)
- 1.75 cup cocoa powder
- 2 tsp baking powder
- 1.5 tsp baking soda
- A pinch of salt
- 1.5 tbsp orange zest
- 1 tbsp vanilla extract
- 1 cup boiling water
- Hershey’s choco chips (unsweetened)
Procedure:
- Mix all the dry ingredients in a bowl
- Add milk, oil and vanilla extract and mix it well. Then, add water to it and beat it well
- Add orange zest to the mixture and give it a whisk (P.S. the batter will be too liquid, but don’t worry this will lead to a very soft cake)
- Preheat the oven at 180-degree fahrenheit for 15 minutes
- Grease the container well and pour the batter into it. Tap the container to evenly spread the batter and bake it
- After 15 minutes, to ensure that the cake is baked properly, insert a tooth pick into the centre of the cake. If it comes out clean, the cake is ready to serve otherwise bake it more
Garnishing:
- Melt Hershey’s choco chips using the double boil method and spread evenly on the cake once it cools down
- Dip some orange slices in the melted chocolate and freeze it
Double layer cake:
- Slice the cake from middle
- Put ganache on both the slices, place chopped oranges on one layer and then put the top cake layer on the bottom one
- Finally, coat the top layer with ganache and let it cool for some time
- Decorate it by sprinkling orange zest, rainbow cake decor or frozen chocolate dipped oranges
Note for a non-vegan recipe:
- Coconut milk can be replaced by buttermilk for extra softness
- Half an egg can be used for the above mixture for making it more fluffy
- While making ganache, add boiling cream or full fat milk in choco chips to make ganache more liquid
