Nothing like a loaded pancakesy brunch on a lazy Sunday morning! Inspired from the cook book of macron queen of India, Pooja Dhingra, here is our version of the pancakes with some twist to enhance the taste.
Ingredients:
- 1 cup of milk
- 1 tbsp vinegar
- 1 Egg
- 3 tbsp melted butter
- 2 cups of all-purpose flour
- 1 cup sugar
- ½ tbsp baking powder
- ¼ tbsp baking soda
- ¼ tbsp salt
Procedure:
- Mix all the dry ingredients in a bowl
- Add egg to the mix and whisk it well
- Add vinegar to milk and add these to the mix giving it a good whisk
- Add in the melted butter and after mixing it well, rest the batter for 45 minutes covering the bowl with cling wrap
- Once the batter has rested well, add butter to the saucepan and spread it well
- Pour a ladle of batter and let it cook completely from one side and then flip it to cook from the other side as well
Important points to remember:
- Spread the butter evenly on the saucepan
- Flip only when you see bubble on the top surface. It is a sign that the pancake has been cooked
- Pour enough batter to make a thick pancake
- The consistency of batter should be a bit thick not very liquid
Serving suggestions:
- Serve hot
- Garnish it with your favorite fruits – banana, strawberries, blueberries or even mangoes, maple syrup and powdered sugar
- Peanut butter lovers can add peanut butter too
