Thai Green Mango Salad

Tangy, sweet, chilly, crunchy – Thai Green Mango Salad it is!

If there is one peculiarity to Thai cuisine – it is being healthy and super tasty. Full of vegetables and yet super tasty with those flavours, texture that you keep wondering how veggies can still taste so yummy. One of the best starters of all times probably is thai green mango salad – best summarised as tangy, sweet, chilly, crunchy and super yummy! Ideally made with Thai green mangoes, but if you dont have these – sweat not we have a hack for you to enjoy the same with your usual green mangoes and sweet mangoes like badami or banganpalli.

Here’s how we make this regularly:

Ingredients:

  • 1 big raw green mango or 2 small raw green mangoes (unripened firm mangoes)
  • ½ firm-ripe mango
  • 4 finely chopped spring onion bulbs and greens
  • ½ cup finely chopped onions
  • ¼ cup finely chopped carrots
  • ¼ cup finely chopped coriander
  • ¼ cup roasted grated dry coconut
  • ½ cup roasted peanuts
  • 5-6 cherry tomatoes
  • 1 cup tofu
  • Salad dressing:
    • 3 ½ tbsp soya sauce
    • 2 tbsp Sriracha sauce (Thai Chili sauce)
    • ½ tbsp tomato ketchup
    •  Juice of ½ lemon
    • 2 tbsp castor sugar

Procedure:

  1. Cut the mango into fine thin slices
  2. Prepare the salad dressing by mixing all the ingredients. The salad dressing is more sweet than spicy. It will be a mix of all the flavours more inclined towards sweet in taste
  3. Add onions, carrots, coriander, peanuts and roasted coconut to the sliced mangoes. Mix well
  4. Add the salad dressing and diced tofu pieces to the salad and toss it well. Tossing will ensure that dressing is evenly spread
  5. Garnish it with some fresh coriander and cherry tomatoes

Points to note:

  • The mangoes should be thinly sliced as otherwise grating them using a slicer will result in loss of water from mango and mango slices will not be crisp. Hence, use firm mango chopped into slices
  • Tofu can be fried as well. To keep it healthy we recommend using firm tofu
  • Sriracha sauce can be replaced by a combination of chili sauce and chili flakes
  • We would suggest crushing half of the peanuts before adding, this will increase the crunchiness in salad
  • The taste of mango salad should be tangy, a combination of sweet and sour. To ensure all the flavors are distinct, add the salad dressing at the end just before serving. This will maintain the desired crunch and flavors
  • If salt is required then increase soya sauce and for sweetness increase sugar. Sugar can be replaced by honey
  • Also, finely chopped red chili can be added to increase the spice level
