As you might have guessed, we are truly, madly, deeply in love with avocado! And in our avo-love, we have created this amazing breakfast binge for ourselves which we also use as a dinner companion to the soup bowl or which is a very-well loved starter while hosting friends – greek-styled avocado toast. This is a toast layered with basil pesto, guacamole, avocado slides, black olives, baby spinach and feta cheese. Coming from our kitchen to yours, this super simple and delicious breakfast recipe and many kids love it too.
Ingredients:
- Bread of choice, we recommend either sourdough or focaccia. We mostly use these in Singapore – Gardenia’s multigrain country loaf sourdough or Gardenia’s italian focaccia (if not using our home-baked focaccia)
- Basil pesto or Pesto Alla Genovese Italian (again, we use Agnesi Pesto Alla Genovese Italian and it’s super yum, see the picture below) – you can make this at home also
- Guacamole – see this recipe in our Avocado toast post. We will share in a video how to make guacamole soon
- Avocado slices
- Sliced black olives
- Feta cheese
- Baby spinach
- Cherry tomatoes
- Alfa alfa sprouts (optional but they enhance this toast a lot, see the picture below)
- Chili flakes/chili padi powder
Procedure: (for making one toast, prepare ingredients according to the no of toasts you may need)
- Toast the bread in an oven after brushing mildly with butter or simply toast it on a skillet on sim. Doing in oven is easier if you have many toasts to make. Toast for 8-10 min in a pre-heated oven at 180 degree celsius
- Add 1 tsp pesto and spread well on the toast
- Spread well 1 tbsp guacamole on the toast
- Add 3-4 slices of avocado, 2 leaves of baby spinach, 2 halved pieces of cherry tomato, 3-4 sliced olives
- [optional] Add alfa alfa sprouts on top, we love it and add often
- Sprinkle crumbled feta cheese on top
- Add oregano and chilli flakes on top
- Serve crisp
Note: if you like eggs, you can add half semi-boiled egg on top of the toast
