Date Kheer (Pudding)

Excited about trying a sugar-free dessert for your guests and make it all healthy? Or a yummy no-guilt dessert for yourself? Or a dessert that your kids would love too, with you having no parent-guilt? Your quest will be all answered with this yummylicious Date Kheer that’s full of taste, crunchy dry fruits and without any added sugar! 

We learnt this first from our friend Aditi Syal who made it as a surprise for a celebration for us and have tweaked just minimally this adapted recipe, so sharing from our dessert corner to yours – you are in for a pampering treat for self with this one!

Ingredients:

  • 3 cups milk
  • 10-15 dates
  • 2 cup chopped dry fruits (almond, pistachios, cashews)
  • ½ cup raw coconut
  • 1 cup water
  • 1 tsp cardamom powder

Procedure:

  1. De-seed the dates
  2. Soak the dates in 1 cup milk for an hour and grind them into fine paste
  3. Boil 2 cup of milk and add finely chopped dry fruits. Let it cool
  4. Squeeze out some fresh coconut milk using the grinded raw coconut and 1 cup water in mixer (adjust the consistency as required)
  5. Add the date paste, dry fruit milk, coconut milk and cardamom powder, give a good stir and serve chill
  6. Garnish with dry fruits and finely chopped dates

Points to note:

  • Quantity of dates can be increased depending upon the sweetness desired
  • Remove brown skin of coconut for better colour before grinding with water
  • Chill for at least 5-6 hours for flavours to blend
  • The date kheer will have a flowing consistency
