Tacos – the Mexican feast of crunch, veggies, lots of cilantro & tangy lime and spicy taco flavours. We make it with sauteed veggies (onion, pepper, corn with some beans and taco seasoning and sauce), finely chopped cottage cheese (paneer), black beans and topped with taco-salsa sauce, guac, sour cream. Add some pica de gallo if you like. You can always play around with its filling and that’s the beauty of this easy feast!

What stands out peculiarly for us about tacos is how well the crunch of shell compliments the texture and taste of filling inside. Some people also like soft tortilla wrap instead of hard shell, go for it if that’s your palette too.


  • 12 hard taco shell (we use @oldelpaso @oldelpasosg)
  • Sauteed vegetables
    • 2-3 cloves of minced garlic
    • 1 sliced onion
    • 1 sliced green pepper
    • ½ cup boiled corn kernels
    • ½ cup boiled black beans
    • Taco seasoning mix (home made or @oldelpaso)
    • Taco sauce (@oldelpaso)
    • Salt to taste
    • Lemon
    • Oregano
  • 200 gm small cubes of paneer
  • 200 gm chopped cilantro
  • Grated cheddar cheese
  • 200 gm boiled black beans
  • Lemon
  • Salt
  • Sour cream
  • Guacamole
    • 2 ripe avocados – mash them fully
    • 1 small finely chopped onion
    • 1 small finely chopped tomato
    • Few pieces of chopped jalapeno
    • Lemon (generous amount)
    • Salt
    • Black salt
    • Cilantro
  • Salsa-taco dip
    • 2 tbsp taco sauce (@oldelpaso)
    • 2 tbsp medium spicy tostito chunky salsa sauce / replace with homemade salsa
    • 1 tsp sriracha / chilly sauce


Sauteed vegetables:

  1. In a tbsp. of oil, sauté garlic until golden brown
  2. Add onion and pepper and sauté until done
  3. Add corn kernel and beans to it, followed by taco spices, salt and sauce. Adjust the spice level as needed
  4. Sprinkle 8-10 drops of lemon to it
  5. Add a bit of oregano for flavor enhancement


  1. Take chopped paneer in a bowl.
  2. Make the seasoning for paneer using 1 tbsp taco sauce mixed with 1 tsp taco spice mix, 8-10 drops of lemon juice and salt to taste and add this to the paneer
  3. Toss gently

Black beans:

  1. Boil black beans and keep 2-3 tbsp of its water to use in this mix
  2. Add salt and lemon to taste


  1. Mix all the ingredients listed above in the section guacamole

Preparing the taco:

  1. Roast the taco shell by vertically hanging in the tray in a preheated oven for 5 min
  2. In each shell, add 1 tbsp of vegetables, 1 tbsp of paneer, 1 tbsp of black beans, 1 tsp each of sour cream, guacamole and salsa-taco dip
  3. Sprinkle cheese and cilantro on top and a dash of lime
  4. Eat immediately to enjoy the crunchy tacos
Serve them stacked up!
