One of the best things about lemon coriander soup is it is super healthy, full of rich nutrients of lemon, coriander and other veggies. Lemon is rich in vitamin C which makes this soup all the more healthy and a quick go to recipe. This soup can be made with some simple ingredients following the below mentioned steps which will serve 4 people.
Lemon coriander soup
Ingredients:
- 4 cup of vegetable stock
- ½ cup finely chopped coriander
- 3-4 finely chopped garlic
- ½ tsp ginger, finely shredded
- 3-4 finely chopped green onions
- ½ cup finely chopped carrot
- ½ cup finely chopped cabbage
- 2 green chilies, finely chopped
- 2 tbsp lemon juice
- 2 tbsp corn flour slurry
- Salt, as per taste

Procedure:
- In a pan, heat the oil and add garlic and ginger and sauté for a minute or so
- When garlic starts to turn golden in colour add onion bulbs and sauté. Now, add carrot and cabbage and sauté for 4-5 minutes
- Add, finely chopped green onion stems, salt, stock and lemon juice. Stir it well and bring it to a boil
- Finally add the corn flour slurry and give it a good mix. Here on, the soup will start thickening
- Add the chopped coriander. Adjust the salt as per taste. Bring it to a boil and serve hot
Points to note:
- For vegetable stock, we have used 2 Knorr vegetable stock cubes for 1 litre of water. You can also make vegetable stock at home
- To make corn flour slurry, add 2 tbsp of water to 2 tbsp of corn flour and mix it well
- Can increase or decrease the quantity of lemon juice based upon the desired tanginess
