One of the great things about India is its rich culture that is reflected in its many of the delicious foods as well. Each region has its own flavour and taste, which can be witnessed in the food originated from there. Hare pyaaz ki sabji is one such delicacies from Rajasthan, famous for its spicy food. Made primarily from the greens of spring onion, this is a loved dish in a RajasthanI thali.

Ingredients:
• Spring onion with greens finely chopped (onion bulbs to be used along with onion below)
• 1 big onion, finely chopped
• 5-6 tbsp gram flour
• Pinch of asafoetida
• ½ tbsp turmeric powder
• ½ tbsp red chilli powder
• ½ tbsp coriander powder
• ¼ tsp mustard seeds
• Pinch of sugar
• Salt, as per taste
• 2-3 green chillies
Procedure:
- In a pan, heat some oil, add mustard seeds and asfoedita. When mustard seeds splutter add green chillies and onion and cook until onion turns golden brown
- Add turmeric powder, red chilli powder, coriander powder, salt and a hint of sugar to the mix
- Add gram flour to the mix and sauté. Sprinkle some water and give it a good mix
- Finally add the chopped green onions and mix it well. Serve hot
