Classic Waffles

Waffle is the most favourite breakfast choice amongst most people. The best ones are crunchy on the outside and soft in the inside. This moist and fluffy breakfast can be enjoyed with some fresh fruits, scoop(s) of gelato, a sprinkle of castor sugar or simply with maple syrup.

  • 1.5 cup all-purpose flour
  • 4 tbsp cornflour/rice flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup almond milk
  • 1 cup yogurt
  • ¾ cup olive oil
  • 1 egg
  • 2 tbsp vanilla essence
  • 4-5 tbsp sugar
  • 2 tbsp maple syrup

  1. In a bowl, sift all the dry ingredients except sugar
  2. In another pan., beat 1 egg and add yogurt, milk, oil, vanilla essence and sugar, mix it well
  3. Add the liquid to the dry mix and mix it well
  4. Ensure there are no lumps. Some tiny lumps are ok
  5. Pre heat the waffle iron for 10 minutes
  6. Pour the mix using a ladle, make sure that the corners are filled properly. Avoid over filling
  7. Let it cook until golden brown in colour
  8. Serve it hot with some ice-cream, topped with maple syrup and some fresh berries

Note: To make it vegan, do not add egg. Also, as an alternative to almond milk you can add 1 1/2 cup of buttermilk
