We are a regular recipe creator of Chinese cuisine, both the Asian/Chinese way as well as the Indian way. Remember the time when we shared dan dan noodles and used chilli oil in it (an essential part of the awesomeness of these noodles), we prepared our own chilli oil infused with herbs and what a mindblowing zing it added! The real differentiator indeed was the addition of aromatics in it. Here is how we made it :
Heat up 1 cup of olive oil and when it starts to boil, add 1 cinnamon stick, 1 star anise, 1 big cardamom, 1 bay leaf and fry until you can sense the aroma. Take all the aromatics out and lower the flame. Add 4-5 sliced garlic and 1.5 tbsp sesame seeds and fry until garlic is golden. Take 5 tbsp of red chili flakes in a bowl and pour the hot oil over it (ideally use half-half mix of normal red chili flakes or Sichuan chili flakes, but if not available use all normal). Store in a jar after cooling at room temperature. You can store in a jar for upto a year.
