Mixed Vegetable Uttapam

Uttapam (semolina pancakes) is one of the most popular South Indian dishes, generally enjoyed with variety of chutneys like peanut chutney, coconut chutney, tamarind chutney etc. and sambhar. The most amazing thing about this delicacy is it can be enjoyed in different ways, ranging from plain uttapam, cheese uttapam, onion uttapam, tomato uttapam to vegetable uttapam. Today we are sharing the recipe of mixed vegetable uttapam which is not only healthy but also full of flavours.

Mixed vegetable uttapam (semolina pancake)

Ingredients:

  • 2 cup semolina (bareek rava)
  • 1 cup curd/plain yogurt
  • 2 tsp water
  • Salt, to taste
  • ½ tbsp black salt
  • 1 green chilli, finely chopped
  • ½ cup grated cabbage
  • ½ cup grated onion
  • ¼ cup capsicum, finely chopped
  • ¼ cup grated carrot
  • ¼ cup fresh coriander leaves, finely chopped
  • Oil

Procedure:

  1. In a bowl, add curd and water mix it well. Add this to semolina to form the paste. Ensure that the consistency of the paste is thick. It should not be of flowing consistency
  2. Add the veggies and spices to the paste. Mix it well ad let it rest for 20-25 minutes before making the uttapam (pancakes)
  3. Heat a flat pan, lower the sim, pour a ladle of the mix prepared and spread the mix evenly using the back of a round serving spoon. Pour some oil at the side and on the top and flip it to cook it from the other side as well
  4. Serve hot with chutney and sambhar
