Fruits and Greens Rainbow Salad

What a tropical salad could look like? Our imagination translated to the following – a bit of greens, fruits, vegetables with a bit of nuts of liking with the addictive dijonnaise honey dressing! Tadaaa – the amazing salad was thus named as fruits and greens rainbow salad! The beauty of this salad is the amazing mélange of greens, fruits, veggies with the complementary dressing. You really got to try this one out!

Ingredients:

Salad

  • 4 cups greens (sorrel, green mustard, rocket leaves, can also add microgreens, lettuce)
  • ½ cup each cubes of dragonfruit, orange, strawberry, pineapple
  • ¾ cup halved red cherry tomato
  • ½ cup cubes of Japanese cucumber
  • ½ cup coarse cashew nuts (also can use spicy nuts)
  • ½ cup pinenuts
  • ¼ cup roasted peanuts
  • 100 gm diced fresh mozzarella cheese

Dressing – dijonnaise honey

  • ¼ cup dijonnaise
  • ¼ cup molten honey
  • ¼ cup extra virgin olive oil
  • ¼ cup white vinegar
  • few drops of lemon
  • 1 tsp black salt
  • Salt and pepper to taste

Procedure:

  • Wash the greens and strain and air dry them
  • Put greens in the bowl, followed by fruits and vegetables
  • Sprinkle all the nuts on top
  • Add fresh mozzarella
  • Sprinkle the dressing over
  • Toss gently and serve it chilled
