Carrot Soup

If life were only full of soups and salads, what would be your go-to soup to have everyday? The current flavor I am hooked on to is carrot soup, something I could savour everyday. Absolutely flavourful, healthy and can be tweaked with many flavourful variants like basil, ginger, garlic, nuts of choice etc.

Ingredients:

  • 3 carrots, chopped into medium sized cubes
  • 1 clove garlic
  • ¾ inch ginger
  • ½ onion sliced
  • Water, per consistency
  • 1 cup vegetable broth (made from 1 cube stock and 1 cup water, or freshly made)
  • 1 tsp oregano / Italian mixed herbs
  • 1/2 tsp black pepper powder
  • ¼ tsp red chili flakes
  • ¼ tsp salt
    • Roasted pumpkin seeds for garnishing
  • 1-1.5 tbsp oil

Procedure:

  1. In a pan, take the oil and when it is hot, add garlic and sauté until golden brown
  2. Add onion to it and sauté well, followed by ginger
  3. Cook for another 2-3 minutes or until aromatic and then add carrot and let it cook for 2-3 minutes
  4. Add the cooked vegetables in a pressure cooker with 2 cup water and salt
  5. Take 4 whistles and then let it cool
  6. Drain out the water (keep it aside) and blend the veggies well to a very smooth puree
  7. Take the puree in a big pan with the water that was kept aside and broth and let it boil after adding all the herbs/spices in it
  8. Add water if needed
  9. Serve the soup hot with pumpkin seeds as the garnish
