Excited about trying a fully sugar-free mango dessert? We love mangoes and cannot afford to not focus on healthy eating too. This experiment of Mango Date Kheer – full of taste, mango goodness, crunchy dry fruits and without any added sugar – just served us right! The extra sweetness of fully riped alphonsos took the taste to just another level!
This mango date kheer served dual purpose in this mangomania season at @breakandbinge and for this ongoing #ramandan season for many of you (this was a special treat of my helper in her ongoing fasting season!)
Ingredients:
- 3 cups milk
- 10-15 dates
- 1 cup alphonso mango pulp
- 2 cup chopped dry fruits (almond, pistachios, cashews)
- ½ cup raw coconut
- 1 cup water
- 1 tsp cardamom powder
Procedure:
- De-seed the dates
- Soak the dates in 1 cup milk for an hour and grind them into fine paste
- Boil 2 cup of milk and add finely chopped dry fruits. Let it cool
- Squeeze out some fresh coconut milk using the grinded raw coconut and 1 cup water in mixer (adjust the consistency as required)
- Add the date paste, mango pulp, dry fruit milk, coconut milk and cardamom powder, give a good stir and serve chill
- Garnish with dry fruits and finely chopped dates
Points to note:
- Quantity of dates can be increased depending upon the sweetness desired
- Remove brown skin of coconut for better colour before grinding with water
- Chill for at least 5-6 hours for flavours to blend
