Layered Mango Lassi

Lassi is a thread that not only binds many varying regions of India, but having lived in Singapore for almost a decade – the love for lassi in this region is paramount as well.

Experimented yet again with these Layered Mango Lassi and it’s a heavenly treat to tummy and eyes! One can create the cute layered lassi shots as a dessert for the parties too. Loaded with nuts and alternating layers of mango and plain lassi, they are best enjoyed when chilled!

Ingredients:

2 cups yogurt

2 fully ripe alphonso mango

1 tsp cardamom powder

2 tbsp milk

2 tbsp honey /sugar

Roasted pine nuts

1 tbsp chopped cashewnuts

1 tbsp chopped almonds

1 tbsp chopped pistachio

Procedure:

Mango lassi: take 1 cup yogurt and 2 fully ripe (sweetest) alphonso pulp/cubes, cardamom powder and blend all well. No sugar needed if mangoes are sweet

Plain lassi: take 1 cup yogurt, milk, honey /sugar and blend well. This lassi will be thinner than mango lassi

Let’s layer now!

Put mango lassi at the bottom up and top it up with charoli or roasted pine nuts. Important to put these nuts for extra kick. Then gently put plain lassi layer and freeze for 10 min for it to settle down. Then layer up again with mango lassi and then put chopped cashew, almonds and pistachio. Let it chill for half an hour before enjoying it!

You can also add strawberry lassi layer to it to make it funner for kids.
