Quick and Easy Indian Styled Fried Rice

This Indian-styled Fried Rice is the most easy and delicious way to make use of left-over rice in the fridge with some veggies and Indian spices – that’s what I often do for a quick lunch meal on a working day.

The best part about this dish is you can tweak to your liking and add the veggies of choice. The way I make it is in the below recipe!

Ingredients:

  • 2 cups cooked basmati rice
  • 1 tbsp oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • 1 green chilli – finely chopped
  • 1 garlic clove – finely chopped
  • 2 tbsp finely chopped carrot
  • 1 tbsp finely chopped beans
  • 1 tbsp greens of spring onion
  • ½ cup peas
  • 10-12 curry leaves
  • Coriander leaves for garnish
  • 1 small lemon’s juice
  • 1/2 tbsp turmeric powder
  • 1 tbsp red chili powder
  • ½ tsp garam masala
  • Salt to taste
  • 2 tbsp fried peanuts

Procedure:

  • In a pan, heat oil and sauté garlic until light brown. Add cumin seeds, mustard seeds, green chili and curry leaves and sautee for half a minute
  • Add all the vegetables to it (except spring onion which should be added towards the end for best flavours)
  • After around 1.5-2 minutes of cooking veggies on low to medium flame, add all the spices and mix well. Cook for another 20 seconds
  • Add cooked rice and gently mix everything. Cover with a lid after sprinkling 2 tbsp water all across and let it steam well
  • Add green onion, peanuts and lot of lemon juice and cook for another 1-1.5 minutes
  • Serve hot after garnishing with coriander leaves
