This Indian-styled Fried Rice is the most easy and delicious way to make use of left-over rice in the fridge with some veggies and Indian spices – that’s what I often do for a quick lunch meal on a working day.
The best part about this dish is you can tweak to your liking and add the veggies of choice. The way I make it is in the below recipe!
Ingredients:
- 2 cups cooked basmati rice
- 1 tbsp oil
- ¼ tsp mustard seeds
- ¼ tsp cumin seeds
- 1 green chilli – finely chopped
- 1 garlic clove – finely chopped
- 2 tbsp finely chopped carrot
- 1 tbsp finely chopped beans
- 1 tbsp greens of spring onion
- ½ cup peas
- 10-12 curry leaves
- Coriander leaves for garnish
- 1 small lemon’s juice
- 1/2 tbsp turmeric powder
- 1 tbsp red chili powder
- ½ tsp garam masala
- Salt to taste
- 2 tbsp fried peanuts
Procedure:
- In a pan, heat oil and sauté garlic until light brown. Add cumin seeds, mustard seeds, green chili and curry leaves and sautee for half a minute
- Add all the vegetables to it (except spring onion which should be added towards the end for best flavours)
- After around 1.5-2 minutes of cooking veggies on low to medium flame, add all the spices and mix well. Cook for another 20 seconds
- Add cooked rice and gently mix everything. Cover with a lid after sprinkling 2 tbsp water all across and let it steam well
- Add green onion, peanuts and lot of lemon juice and cook for another 1-1.5 minutes
- Serve hot after garnishing with coriander leaves
