Ingredients:
Vegetables:
- 1 cup capsicum each – green, red, yellow (cubed)
- 10-15 asparagus sticks (stem shortened)
- 1 cup broccoli florets
- 1 cup poatao (cubed)
- 1 cup sweet potato (cubed)
- 6 baby corn (vertically chopped)
- 1 cup zucchini (sliced)
- Other vegetables of choice
Seasoning:
- 2 tbsp rice vinegar
- 2 tbsp olive oil (EVVO)
- 1 tbsp oregano
- 1 tsp Italian herbs
- 1 tsp rock salt
- 1 tsp chaat masala
- 1 tsp salt
- 1 tsp chili flakes
- 1 tsp lemon juice
Procedure:
- Take all the ingredients of seasoning together in a bowl and whisk well
- Sprinkle the seasoning well on the vegetables
- Put in the grill (for Ninja foodi grill, set it up at max temp and 6-7 min time and turn on the grill mode. Flip once in between for best taste)
- Serve hot after sprinkling a few more drops of seasoning on top!
