Vegan Laksa with Homemade Paste

Home made laksa

Finally we have the Laksa made 100% from scratch at home! You must have seen the Laksa recipe earlier on break&binge using the paste, but this time the paste is also vmade at home. And can totally tell you that all kinds of taste buds would love it!

Ingredients:

For laksa paste:

  • 1 big onion
  • 4 garlic cloves
  • 3/4th inch ginger
  • 1 inch galangal
  • 2-3 kafir lime leaves
  • 1 tsp turmeric powder
  • Salt to taste
  • 2 candlenut
  • Little sugar
  • 1 big red chilli

For vegetables:

  • 8-10 broccoli florets
  • 1 small carrot – sliced
  • 8-10 snow peas
  • Capsicum, if you like
  • Spinach, if you like
  • 1/2 bowl bean sprout
  • Other vegetables of liking
  • 1 lemongrass

For soup:

  • 200 ml coconut milk
  • Water
  • Lemon
  • Rice noodles

For sambal:

  • 2-3 red chilli padi (small fresh red chilli)
  • 2 cloves of garlic
  • 1/2 tsp vinegar

Procedure:

  1. Blend all the ingredients under laksa paste nicely and then cook this paste until a nice smell starts to come
  2. Add vegetables and allow to cook until fork tender (don’t overcook as a good crunch is very nice in laksa later)
  3. Add coconut milk and water and allow to come to a boil
  4. Add salt if needed
  5. Sprinkle lemon juice
  6. Cook the rice noodles on the side and keep it ready
  7. To add more chilli zing, prepare the Sambal paste by first boiling small red chilli and garlic (listed under the paste ingredients above) and then blend it with little vinegar
  8. For serving, put noodles followed by soup and then sambal paste as per the required hotness
  9. Enjoy it hot!
