A vegan, gluten-free, super yum, fiber-rich and proteinicious snack that’s served with our own style of avocado sauce, these black-eyed pea and quinoa fritters were created as an experimental gig in the kitchen with the leftover black-eyed peas curry (lobia). Crunchy from outside and moist from inside, these fritters when made with quinoa are a nutrient rich snack for your evenings. Super happy at the output indeed, without having done any research on it! Only later, we got to know that these are actually made on the New Year’s Eve to bring and wish good luck on New Year’s (yes we all need our share of good luck in 2020!) and are also a popular street food by the name of Akara/Accara in West Africa. We suggest to oven-bake it or shallow fry it, but not deep fry. Quinoa addition in it makes them soft from inside and absolutely super rich in proteins. Typically served with ranch dressing, we served these with avocado sauce (again an experiment!) and can absolutely vouch for it perfectly complementing the otherwise-full-in-itself fritters. You must try these fritters with avocado sauce!
Ingredients:
Fritters
- 2 cup cooked and minced black-eyed peas (we used the leftover black-eyed pea curry – dried it before using and it already had some spices in it)
- ½ cup cooked quinoa
- 1 medium chopped onion
- 1 small chopped red pepper
- 2 cloves of minced garlic
- 1 cup powdered bread crumbs
- 1 tbsp chopped cilantro
- Salt to taste
- ½ tsp black pepper
- 1-2 tsp oregano/Italian seasoning
- 1 tsp chaat masala (to make it slightly spicy)
- ½ tsp dry mango powder (optional, if you like it tangy)
Avocado sauce
- 1 avocado
- 2 small cloves of garlic
- 1 tbsp cilantro
- Salt to taste
- ½ lemon’s juice
- 1 tbsp olive oil
- Water, as needed
Procedure:
- Mix all the ingredients of fritters using a spoon or a masher. Make sure all the vegetables are finely chopped in a processor
- Make them into small patties and place in a pre-heated oven for baking at 180 degree celsius until golden on one side and flip to bake on the other side
- Blend well all the ingredients of avocado sauce and serve the hot fritters with this sauce!
