Microgreens are edible plants, eaten at the seeding stage and can be grown easily at home as well. The avid salad lovers that we have become, we were all up for trying a new #saladrecipe using their 8 different types of microgreens:
- Lemon balm
- Red mustard
- Mizuana
- Black basil
- Red vein sorrel
- Mint
- Mustard
- Coriander
We were super excited to receive the box of farm fresh green veggies from Urban Tiller, a one stop destination for farm fresh vegetables grown locally in Singapore. Generally, most of the vegetables lose upto 90% of nutrients after 24 hours of harvest – alternatively what it means is what we buy from supermarkets are not as nutrient rich as we think. This farm to table concept from Urban Tiller ensures that the fresh vegetables are delivered at the doorstep within 8 hours of harvest and are full of nutrients and flavours. They also ensure there is zero wastage and support a sustainable and affordable #urbanfarming.
All these microgreens had their own distinct flavours, we just can’t tell you in words how fragrantful they were when we got them! We got completely bowled over when we actually tasted them. In addition to this, microgreens can be harvested again, by putting the shoots and some leaves in a larger pot under direct sunlight and watering them daily.
Coming back to our creation, we made this amazing #microgreenssalad and as always the dressing is important. To ensure that the taste of microgreens remains intact, we decided to create a dressing with minimalistic yet complementary flavour so that it does not overpower the taste of the greens.
Ingredients
For dressing:
- 3 tbsp olive oil
- 1 clove of garlic
- ½ tbsp lemon juice
- Salt, to taste
- ½ tsp oregano
- ½ tsp chilli flakes
- ½ tsp black pepper
- ½ tsp black salt
- 1 tsp honey
For salad:
- Freshly cut microgreens
- 1 diced avocado
- ½ cup diced grapes
- ½ cup diced cherry tomato
- ½ cup roasted chopped nuts (almonds, cashew, walnuts)
Procedure:
- In a blender, add all the ingredients for dressing and blend it well to prepare the salad dressing
- In a bowl, add all the ingredients and mix it well. Add the dressing and toss the salad
